Makes 36 truffles
1 2/3 cups Nuts of choice (choose two kinds: almonds, cashew, pili nuts, walnuts. My favorites are almonds and walnuts)
1 cup Shredded old coconut (or desiccated coconut)
1/2 cup Raisins
1/2 cup Goji berries
1/2 tbsp Maca powder
1/2 tbsp Coconut sugar
1 1/2 tbsp Cacao powder
2 tbsp Carob powder
1/2 tsp Nutmeg
1/2 tsp Cardamon
3 tsp Coconut oil
- Process all ingredients until crumbly.
- Shape into small, round balls and dust with ground nuts, shredded coconuts, or top with goji berries for a Christmas feel.
Makes 36 small truffles. Will keep for 4 to 5 days in the refrigerator and a few weeks in the freezer.
MEET THE CHEF
It was love at first bite for Raw Yogini Sonia and raw food. Ever since she attended her first raw food class with Jonny Freesh and since her friends encouraged her to teach raw food preparation classes in Manila, Philippines, she knew she wanted to take it to the next level by attending Elaina Love’s course. Since then, she’s been teaching monthly raw classes in Manila and just recently started selling raw food.
She is also a yoga teacher and said that her happiest place is when she get to share raw food dishes and yoga poses. But like most people in this path, it took her years to finally pursue these two loves. A new found love is teaching prenatal yoga.
When not teaching, Sonia does batik painting, guides her friends into detox and cleansing, does Reiki healing or Chi Nei Tsang (tummy massage) sessions, does social media work, or is working on her website.
