STEVIA CHOCOLATES

I had a great week!  It was my friend Ahuva’s birthday and since we have been long time raw food buddies she wanted an all raw birthday dinner.  She came and stayed with me for the week and we did a lot of amazing and fun food prep.  One of the treats we really enjoyed was our sugar free chocolates sweetened with stevia and just a touch of coconut sugar for flavor.

I hope you enjoy them as much as we did.

And it’s just in time for the holidays.  Say I LOVE YOU with some healthy chocolates.

Here’s the Stevia Chocolates recipe and some photos of our fun week together.

 

Base:

1 cup melted cacao butter

1/4 cup melted coconut oil

1 1/2 cups cacao powder

1/2 cup lucuma powder (if you don’t have add carob powder or mesquite powder)

15 drops liquid vanilla essence (Medicine Flower)

30 drops caramel essence (Medicine Flower)

1 1/2 teaspoons white stevia powder with nothing else added (Sweet Leaf Brand)

1/2 teaspoon himalayan salt

 

1. Blend everything together in a dry (no moisture) blender until smooth.

2. Pour into chocolate candy bar molds.

 

Additions:

Divide the batter into 3 bowls:

 

Bowl 1: Almond Raisin

3 Tablespoons POWDERED coconut sugar or xylitol

1/2-1 cup chopped almonds (soaked and dehydrated first if possible)

1/4-1/2 cup raisins

 

Bowl 2: Coconut Pecan

3 Tablespoons POWDERED coconut sugar or xylitol

1/2-1 cup chopped pecans (soaked and dehydrated first if possible)

1/2 cup coconut chips

 

Bowl 3: Buckwheat Crunchies

Keep plain and have as stevia chocolates OR

3 Tablespoons POWDERED coconut sugar or xylitol

1 cup soaked and dehydrated buckwheat
